What is the difference between freeze-drying and air-drying for the konjac sponges?

The konjac sponges production process

The konjac sponges production process,The process is simple enough. Konjac glucomannan powder is mixed with calcium hydroxide, heated, frozen and then dried. The calcium yields an alkaline end product that helps to balance an overly acidic skin pH. Sometimes powdered charcoal or green or red clay is added to benefit different skin types and further draw out skin impurities.

1.Mix konjac glucomannan flour and water and stir well.

2.Import the mold and wait for cooking.

3.Cook for several hours to form.

4.Drying treatment,There are two methods here, one is freeze-drying and the other is air-drying. Let's talk about the difference between these two methods today.

Freeze-Drying: Raw ingredients are frozen, then placed in a strong vacuum, where the temperature is raised slightly. This causes the frozen water to sublimate -- that is, it turns straight from ice into vapor, skipping the liquid phase, and separates from the remaining solid matter.

Air-Drying: Raw ingredients are placed outdoor, where air is continually circulated, slowly and gently evaporating moisture.

Freeze-drying konjac sponges and Air-drying konjac sponges

Freeze-dried vs. Air-dried  3 Differentiators:

1. APPEARANCE

Freeze-dried kongjac sponges and konjac sponges can retain piece identity – that is, the general appearance and color of the original  product.

But the sublimation process in freeze-drying keeps cell structure intact more effectively than the air-drying process. Finished air-dried products tend to have a more shriveled appearance.

2. WATER CONTENT

Water content is lower for freeze-dried products, although it varies from product to product in both categories. An average for freeze-dried is around 1% water content, and an average for air-dried is around 2%.

3. REHYDRATION

Because cell structure remains intact throughout the freeze-drying process, those cells remain ready to take on water again. Freeze-dried konjac sponges may rehydrate in a couple seconds, whereas air-dried konjac sponges may take closer to 1-2 minutes.
